Managing ultra wide monitors with windows

Just wondering if anything exists I cannot find it.

I have a 49 inch screen and open dialogues, save dialogues etc, it seems to be totally random where its going to appear on screen, usually in the middle of the screen its connected to which makes sense, is there an app or something that will always have it appear right in the centre of the screen, thats what I would prefer?
Also after wake from sleep (I think) a number of apps including Microsoft word and Photos will not be full screen but will mimic the aspect ratio of the screen even though it was closed as a portrait rectangle. How can I stop this behaviour, I have to constantly resize them?

Whilst I am here, is there a way to get previews from task bar bigger and if there are say three have the left most preview open the file that is left most on the screen?
These feel like really simple things but over the course of the day totally annoy the bejesus out of me.
